Chicken Parmesan
Ingredients
- 3 chicken breasts
- 1/2 onion chopped
- 1 carrot - peeled chopped
- 1 celery stalk chopped
- 2 garlic cloves chopped
- 2 - 15.5 oz cans of crushed tomatoes ( I like San Marzano kind if you can find it )
- 4 tablespoon olive oil
- 1 teaspoon ( Basil infused olive oil ) - Optional ( see my blog post under Fun Finds )
- 1/3 cup Parmesan cheese
- 1/4 cup fresh basil leaves chopped
- 2 tablespoons italian seasoning ( I used tube kind see blog post under Fun Finds )
- 1 cup mozzarella cheese
- 2 tablespoons light butter
- salt and pepper

Instructions
- In a small bowl add 2 tablespoons of olive oil , 1 tablespoon of the italian seasoning in a tube and some salt and pepper and whisk together - pour the marinade into a large zip lock bag and put the chicken in to marinate - make sure you move it all around to coat the chicken then put it in the refrigerate for about 2 hours or however long you have
- In a pot over medium heat add the olive oil, onion, carrot, celery and some salt and cook for about 10 minutes until veggies are soft - then add in the garlic and tablespoon or the italian seasoning ( I used tube kind -see blog post under Fun Finds) cook for another 2 minutes.
- Next add in the canned tomatoes, chicken stock and some more salt and pepper- cover and let cook about 20 - minutes until all combined and veggies are all tender. Then carefully add the tomato sauce with the fresh basil and 1/4 cup of parmesan cheese to blender and blend until smooth and set aside.
- In a pan on medium- high heat add 1 tablespoon of olive oil and 1 tablespoon of light butter and the marinated chicken breast and cook about 2-3 minutes on each side just until browned but not cooked through . Then, in a baking dish add the chicken and then spoon some of the sauce on top and all around chicken.
- Next top the chicken pieces with the mozzarella and some of the parmesan cheese . Also, before putting it in the oven I like to take 1 tablespoon of butter and put tiny pieces on top of cheese to help it brown but this is optional.
- Bake at 425 degrees for about 20 minutes or until chicken is cooked through and no longer pink inside and enjoy! I serve this with whole grain pasta.
