  1. Season each piece of chicken with salt and pepper and then place in a sauté pan on medium/high heat with 1 tablespoon of the olive oil and brown on each side for about 3 minutes per side. Then take the chicken out and set aside - do not fully cook Meanwhile, place broccoli in the steam bag in the microwave and cook 3 minutes and then set aside.
  2. In the same sauté pan add the shallot and cook about 4 minutes and then add the garlic and cook another 2 minutes. Next add in the butter and flour and cook for 3-4 minutes to get the raw flour taste out and then stir in the sherry, milk, chicken broth, curry powder, nutmeg and some salt and pepper and whisk until the sauce starts to thicken about 6 minutes.
  3. Next, stir in the 3/4 cheddar cheese to the sauce and stir until it melts and then turn off the heat. Last, place the chicken pieces and broccoli florets in the baking dish and spread around, then pour the cheese mixture over the top and top that with the 1/4 cup of cheese blend.
  4. Cover the baking dish with foil and cut about 6 slits in the top of the foil for steam to escape and bake at 325 degrees for 35 minutes and enjoy! This is my take on the classic version I loved as a kid and it is so delicious! :)
