Mahi Mahi Fish Tacos with Mango Salsa
Ingredients
- 1 12-14 oz mahi mahi filet of fish or more if needed
Rub for the Fish
- 1 & 1/2 teaspoon Cayenne pepper
- 1 & 1/2 teaspoon paprika
- 1 lemon the zest
- 1 tbsp extra virgin olive oil
- 1 & 1/2 teaspoon chipotle pepper
- salt and pepper
Mango Salsa Topping
- 2 small mangos peeled and chopped
- 1/2 15 oz can black beans drained and rinsed
- 1/4 white onion - chopped fine
- 1/3 cup chopped cilantro
- 1 lime juice
- 3 strawberries chopped fine
- salt and pepper
Red Cabbage Slaw Topping
- 1/2 red cabbage grated on a cheese grater
- 2-3 tbsp light mayo more if needed
- 1 teaspoon apple cider vinegar
- 1-2 tbsp shallot grated on cheese grater
- salt and pepper

Instructions
- Place all the rub ingredients in a bowl and coat the fish completely and let marinate in the refrigerator for at least 30 minutes. Then place the fish on a charcoal grill - not on the direct heat for about 8-15 minutes until the doneness you desire. Keep the grill covered to allow it to "smoke" checking on it as you cook it.
- For the salsa - add all the ingredients to a bowl and let sit for at least 30 minutes before serving . For the slaw- add the grated cabbage and onion to a mixing bowl and then the mayo, vinegar, and salt and pepper and let that site for about 30 minutes as well.
- I also serve this with some light sour cream and more cilantro and they are light and delicious! :)
