In a medium pot add the olive oil, chopped onion and a pinch of salt and cook for about 6 minutes. Then add in the garlic, spinach, peas, fresh herbs and some more salt and pepper and cook about 3 minutes until the spinach starts to wilt.
Next, add in the chicken stock and lemon juice and stir everything around to combine. Then let this simmer and cook for about 10 minutes until all the flavors have combined and the stock reduces a little bit.
The carefully add the soup to a blender and make sure to hold a kitchen towel over the top and pulse until smooth and enjoy!
